摘要
近年来,延边地区的明太鱼从餐桌上的日常食物,逐渐成为地方的文化符号,并渗透到当地人社会生活的各个方面。当地居民从食用明太鱼的历史文化起源出发,在品尝、感知、制作和销售明太鱼的实践过程中,通过食物、环境和人的社会互动,使得传统饮食在地方调适中形成其独特风味。基于饮食人类学的视角,探讨明太鱼如何成为承载吉林延边地区人们意义表达的符号,解读其“好吃”和“好想”的符号意义,探索当地人如何通过“明太鱼加工厂”和“明太鱼屋”提升其经济价值,并阐释其融入当地生活、实现符号在地化的过程。延边地区的明太鱼与当地人的社会生活相联系并被赋予意义,实践着从饮食形态到文化形态、从食物到符号的变迁,从而最终实现其在地化。
In recent years,the walleye pollack in Yanbian area has gradually become a local cultural symbol from the daily food on the dining table,and has penetrated into every aspect of their daily life.Starting from the historical and cul-tural origin of eating the walleye pollack,in the process of tasting,perceiving,making and selling the walleye pollack,the local residents make the traditional food form its unique flavor through the social interaction between food,environment and people.From the perspective of Food Anthropology,this paper tries to discuss how the walleye pollack becomes the symbol bearing the meaning expression of people in Yanbian area,and interprets the symbolic meaning of“delicious”and“thinking”;and explores how to enhance the economic value of the walleye pollack through the“walleye pollack process-ing factory”and the“walleye pollack house”,and explains the process of integrating into local life and realizing the sym-bol in localization.The walleye pollack in Yanbian area is connected with the social life of the local people and is en-dowed with significance,gradually practicing the change from food form to cultural form,from food to symbol,so as to realize its localization.
