摘要
多酚类化合物是植物中一类化学物质的统称,被称为人类"第七类营养素"。多酚类化合物在抗诱变、抗肿瘤、抗衰老等方面具有优良的作用,因其功效以及精细化利用逐渐受到学者们的关注与研究。食品中多酚类化合物的提取方法包括溶剂浸提法,超声辅助萃取法、微波辅助萃取法、酶解法、超临界流体萃取法等。通过对食品中多酚类化合物的提取方法进行综述,以期多酚类化合物的进一步研究提供参考。
Polyphenols are a group of chemical substances in plants,known as the"seventh nutrients".Polyphenols compounds have excellent effects on anti-mutagenesis,anti-tumor,anti-aging,etc,and have been gradually concerned and studied by scholars because of their efficacy and refined utilization.The extraction methods of polyphenols in food include solvent extraction,ultrasonic assisted extraction,microwave assisted extraction,enzymatic extraction,supercritical fluid extraction,etc.The extraction methods of polyphenols from food were reviewed in order to provide references for further study of polyphenols.
