摘要
本文系统总结了食品微生物计量检测技术的发展现状和应用前景。文中详细阐述了平板计数法、最大或然数法和显微镜计数法等传统检测方法的原理、优势和局限性。同时,重点分析了分子生物学检测、免疫学检测和生物传感器等现代快速检测技术的特点和应用进展。研究表明,尽管现代检测技术在检测速度、灵敏度和特异性等方面具有显著优势,但在成本和操作便利性方面仍有改进空间。未来,多种检测技术的优势互补和创新融合,将为食品微生物安全检测提供更加有力的技术支撑。
This article systematically summarizes the current development status and application prospects of food microbiological quantitative detection technology.The article elaborates in detail on the principles,advantages,and limitations of traditional detection methods such as plate counting,maximum probability counting,and microscopic counting.At the same time,the characteristics and application progress of modern rapid detection technologies such as molecular biology detection,immunological detection,and biosensors were analyzed in detail.Research has shown that although modern detection technologies have significant advantages in detection speed,sensitivity,and specificity,there is still room for improvement in terms of cost and operational convenience.In the future,the complementary advantages and innovative fusion of multiple detection technologies will provide stronger technical support for food microbiological safety detection.
