摘要
多数的乡村旅游依托传统的“食住行娱购”而发展,大部分乡村的发展又以“食”为主。而乡村存在从业人员的食品安全意识低、设施配备落后、片面和形式化的监督管理等安全问题,制约着乡村旅游的发展。因此,本文通过对文成县石庄村美食活动长寿宴进行调研,研究符合餐饮生产过程的监督管理模式,并借鉴HACCP制定相应的方案来解决石庄村的食品安全问题。
Most rural tourism relies on the traditional“food,accommodation,transportation,entertainment and shopping”to develop,and most of the rural development is based on“food”.However,there are low awareness of food safety among rural workers,backward facilities,and one-sided and formalized supervision and management,which restrict the development of rural tourism.Therefore,this paper investigates the longevity banquet of food activities in ShiZhuang Village,WenCheng County,and studies the supervision and management mode that is in line with the dining production process,and draws lessons from HACCP to develop the corresponding program to solve the food safety problems in Shizhuang Village.
