摘要
                
                    电子鼻是一种基于传感器技术和模式识别技术的绿色无接触检测设备,在食品安全检测与防控方面具有巨大的潜力和应用前景。为助力国家食品安全战略实施,文章全面介绍电子鼻的工作原理、主要关键技术及常用型号,分别阐述电子鼻在谷薯类、蔬果类、大豆类、动物性食物及纯能量食物中食品安全检测的具体应用,重点总结检测不同物质成分所使用的电子鼻型号及显著的分析方法,并对电子鼻发展趋势进行展望。文章对使用电子鼻进行食品不同气味成分检测具有一定的借鉴作用。随着传感器技术和数据分析方法的不断发展与创新,电子鼻应用领域会更加广泛。
                
                Electronic nose is a green non-contact detection equipment based on sensor technology and pattern recognition technology.It has great potential and application prospect in food safety detection and prevention.In order to help the implementation of the national food safety strategy,the paper comprehensively introduces the working principle,key technologies and main models of electronic nose,expounds the specific application of electronic nose in food safety detection of grain and potato,vegetables and fruits,soybeans,animal food and pure energy food,mainly summarizes the models and significant analysis methods of electronic nose used to detect different substances,and forecasts the development trend of electronic nose.The paper can be used as a reference for the detection of different odor components of food by electronic nose.With the development and innovation of sensor technology and data analysis methods,the application field of electronic nose will be more extensive.
