摘要
采用顶空进样结合GC-MS技术对不同产地压榨的瓜蒌籽油的挥发性风味成分进行分析,并结合化学计量学方法建立不同产地的瓜蒌籽油判别模型。以江苏、安徽和湖北3个产地的瓜蒌籽为研究对象,采用顶空进样方式进行GC-MS分离鉴定,得到相对应的图谱指纹库,结合化学计量学方法建立瓜蒌籽油产地识别模型。结果表明,从不同产地压榨的瓜蒌籽油中共鉴定出47种挥发性风味物质,主要为醛类和醇类化合物,不同产地间的瓜蒌籽油在挥发性风味成分含量有差异,以鉴定出的47种挥发性风味物质含量为变量,采用主成分分析和3种模式识别方法建立判别模型,识别率可达83.33%以上。该方法不使用任何溶剂,操作简单、环保、简便,灵敏度和准确度高,可作为食用植物油产地鉴别的有效手段。
Gas chromatography-mass spectrometry(GC-MS) technology combined with headspace sampling unit was used to analyze the volatile flavor components of pressed Trichosanthes kirilowii oil from different producing areas. Oil samples were collected from Jiangsu, Anhui and Hubei provinces, GC-MS was used to isolate and identify the volatile components from oil sample, the corresponding fingerprint database was obtained and discriminant model of identifying production area was established by chemometrics. The results showed that 47 volatile odor compounds were identified from the seed oils of Trichosanthes kirilowi from different producing areas, and the main flavor composition were aldehydes and alcohols, and the content of volatile odor components in Trichosanthes kirilowi oil from different producing places was different. With the content of 47 volatile flavor compounds identified as variables, principal component analysis and three pattern recognition methods were used to build discriminant models and the recognition rate was over 83.33%. The established method was simple, green, sensitive and accurate, which could be used as an effective method to identify the origin of edible vegetable oils.
