摘要
选取中职学校普遍使用的三个版本的《餐饮服务与管理》教材作为研究对象,从编写依据、内容选择、编排体系、呈现方式等方面进行梳理,发现目前中职学校专业课教材呈现出编写理念体现职业教育思想、内容选取符合行业发展趋势、编排体系彰显职业工作特征及呈现形式图表与文字有机结合等特征,但也存在教材编写与标准及岗位对接不佳、教材内容缺乏实用性、体例结构有待调整、呈现方式仍需完善及习题系统设计欠缺等问题。优化教材编写需要提高职业标准和教学标准在教材编写中的指导地位,教学内容的选择要基于服务产业和需求导向,并根据职业特点和工作要求采取相应的编排体系,发展立体化和活页式教材以完善教材呈现方式,特别要重视和加强作业与习题系统的设计。
Three versions of“catering service and management”textbooks commonly used in secondary vocational schools are selected as the research object,and their compilation characteristics are combed from the aspects of compilation basis,content selection,arrangement system,presentation mode and exercise system.It is found that the current secondary vocational professional textbook reflect that the compilation basis is connected with relevant standards,and the content selection is in line with the industry development trend,the arrangement system reflects the characteristics of professional work,the organic combination of presentation forms,charts and words.However,there are also some problems,such as different standards for the preparation and docking of teaching materials,low docking degree,lack of content practicability,the style structure needs to be adjusted,and the lack of exercises and homework.Optimizing the compilation of teaching materials needs to improve the guiding position of professional standards and teaching standards in the compilation of teaching materials.The selection of teaching contents should be based on the service industry and demand orientation,adopt the corresponding arrangement system according to the professional characteristics and work requirements,develop three-dimensional and loose-leaf teaching materials to improve the presentation of teaching materials,and pay special attention to and increase the design of homework and exercise system.
