摘要
目的:探索不同凝胶条件及质构测试参数对阿胶凝胶强度的影响,建立适用于阿胶产品的凝胶强度检测方法。方法:采用物性测试仪分别对凝胶浓度、凝胶温度、凝胶时间及产品测试参数进行考察,确定最佳阿胶凝胶制备和凝胶强度检测条件。结果:通过实验研究确定最优凝胶制备条件为阿胶胶液浓度25%,凝胶温度4℃,凝胶时间8 h;最优凝胶强度检测条件为测前速率1 mm·s^(-1),压缩速率1 mm·s^(-1),测后速率为10 mm·s^(-1),在2 min内完成样品检测。结论:研究建立的方法对阿胶凝胶强度的检测具有良好的适用性,可实现阿胶凝胶性的精确量化评价,为指导生产和产品品质均一性提升提供有效参考。
Objective:The effects of different gel conditions and texture parameters on the gel strength detecting of Ejiao were studied to establish a standard method.Methods:The gel concentration,temperature,time and the texture parameters were investigated by the texture analyser to get the optimum parameters.Results:The optimal gel preparation conditions were determined by experimental study:gel concentration 25%,4 ℃,gelation time of 8 h.The optimal conditions for the detection were as follows:pretest rate 1 mm·s^-1,compression rate 1 mm·s^-1,after test rate 10 mm·s^-1 and complete the sample detection in 2 min.Conclusion:The established method in this study can be used for the quantitative evaluation of the gel strength of Ejiao,which provide effective reference for the improvement of production and product quality uniformity.
