摘要
阿拉伯木聚糖是植物细胞壁中主要成分之一,一般由阿拉伯糖和木聚糖组成,其特有的阿魏酸在氧化体系中氧化耦合为二聚体或三聚体,并能发生共价交联,形成凝胶。阿拉伯木聚糖凝胶具有良好的持水性、包埋性和生物相容性,且没有特殊味道和气味,可以作为面团改良剂、缓释材料和膜材料等应用于食品工业中。主要对阿拉伯木聚糖凝胶机制、制备方式及其应用进行综述,为阿拉伯木聚糖凝胶的进一步研究提供参考。
Arabinoxylan, one of the main polymers in plant cell wall, is mainly composed of arabinose and xylan. Ferulic acid arabinoxylans typically contained becomes di-FA and tri-FA via the oxidative coupling in the oxidation system, and makes arabinoxylans gel by covalently cross-linking. Arabinoxylan gel Arabinoxylan gel has good water holding capacity, embedding and biocompatibility, and no special smell and taste. So it can be applied to the food industry as a dough conditioner, sustained-release material and film material. This paper reviews arabinoxylan extraction methods, gel preparation and its application to provide reference for further research arabinoxylan gel.
