摘要
山楂中含有丰富的生物活性物质和营养成分。其根、茎、叶、花、果及核均有一定的药用价值。从山楂的果肉、叶、核分别综述山楂的功能成分研究现状及其加工利用现状。山楂深加工及延伸山楂制品加工链条,建立绿色山楂产业链成为山楂产业的发展方向。
Hawthorn contains rich nutrients and bioactive substances. Not only the fruit,its root,stem,leaf,flower and nucleus have some medicinal value. The nutritional function and its research progress of hawthorn were reviewed from three aspects of the flesh,the leaf and the nucleus. Hawthorn deep processing,extension of hawthorn products processing chain and the establishment of green hawthorn industry chain have become the development direction of the hawthorn industry.
