摘要 茯砖茶为黑茶类,属全发酵茶类,“发花”是其区别于其他黑茶的关键工艺,粗老原料的高利用率、独特的加工技术是茯砖茶特征之一,其丰富的文化内涵及独特的饮用价值也独具特色。贵州茶叶产品以绿茶、红茶为主,黑茶的开发仍有极大的上升空间,为满足消费市场需求,促进贵州茶区夏秋茶及粗老叶的利用,以茯砖黑茶的研究进展为参考,从茯砖茶的生产加工、品质化学、质量安全控制、新产品开发等方面的研究进展进行综述,为贵州黑茶及副产品的开发提供借鉴,也为贵州夏秋茶叶产业发展提供新思路。 Fu Brick Tea is a type of dark tea,which belongs to the complete fermentation tea.“Fahua”is the key technology that makes Fu Brick Tea different from other dark tea.High utilization rate of raw materials and unique processing technology are one of the features of Fu Brick Tea,and its rich cultural connotation and unique drinking value are also unique.The tea industry in Guizhou is dominated by green tea and black tea,and the development of dark tea still has a great room to rise.In order to develop the consumer market demand and promote the further development of the tea industry in Guizhou,and increase the utilization of summer and autumn tea and coarse and old leaves in Guizhou,Taking the research progress of Fu Brick Tea as a reference,the research progress of Fu Brick Tea was summarized from the aspects of production and processing,character,quality and safety control,and new product development,so as to provide reference significance for the development of Guizhou dark tea and its by-products,and provide a new way of thinking for the development of Guizhou summer-autumn tea industry.
