黑果枸杞中原花青素的提取及其咀嚼片的研制 被引量:11

The Extraction of Proanthocyanidins from Lycium ruthenicum Murr. and Preparation of Chewable Tablets

摘要 研究高速剪切提取技术辅助提取黑果枸杞中原花青素的工艺及其咀嚼片的配方制备工艺。通过单因素和正交试验,分别考察提取次数、料液比、乙醇体积分数、剪切提取时间及剪切速率对黑果枸杞原花青素提取率的影响,分别考察黑果枸杞提取物用量、微晶纤维素用量、木糖醇用量、苹果酸用量对咀嚼片口感和制备工艺的影响。结果表明,高速剪切法提取原花青素最佳条件为:料液比1︰8(g/mL)、乙醇体积分数45%、剪切时间15 min,剪切速率19000 r/min,提取1次。黑果枸杞原花青素咀嚼片最佳配方为:黑果枸杞原花青提取物40%、微晶纤维素15%、糊精20%、木糖醇10%、甘露醇10%、苹果酸2.5%。所制备的黑果枸杞原花青素咀嚼片表面光滑,色泽均匀一致,酸甜可口,入口柔顺,硬度和脆度适中,符合消费者的口感。 The high-speed shear extraction technology was applied to assist in the extraction of proanthocyanidins from black fruit carp and the preparation process of chewable tablets.The effects of extraction times,solid-liquid ratio,ethanol concentration,shear extraction time and shear rate on the extraction rate of proanthocyanidins from Lycium ruthenicum Murr.were investigated by single factor and orthogonal experiments.The effects of the amount of crystalline cellulose,the amount of xylitol and the amount of malic acid on the mouthfeel and preparation process of the chewable tablets were investigated by single factor and orthogonal experiments.The results showed that the optimum condition for extracting proanthocyanidins by high-speed shearing method was that ratio of material to liquid 1︰8(g/m L),ethanol concentration of 45%,shear time of 15 min,shear rate of 19000 r/min,and extraction once.The best formula of proanthocyanidins chewable tablets from Lycium ruthenicum Murr.was 40%of proanthocyanidins,20%of dextrin,15%of microcrystalline cellulose,10%of xylitol,10%of mannitol and 2.5%of malic acid.The proanthocyanidins chewable tablets from Lycium ruthenicum Murr.has a smooth surface,uniform color,sweet and sour taste,soft entrance and moderate brittleness,and conforms to the taste of the consumer.
