“两问三分”式教学模式在食品化学教学改革中的应用实践——学生解决复杂问题能力培育探索

The Application Practice of the“Two Questions and Three Steps”Teaching Mode in the Reform of Food Chemistry Teaching--Exploration of cultivating students’ability to solve complex problems

摘要 食品化学内容涵盖食物从农田到工厂,从工厂到货架的全过程变化。随着大食物观、未来食品、新型食品加工技术的发展,食品化学肩负着探索食品科学发展新途径和培养一流食品专业人才的重要使命。传统食品化学教学中存在“课程内容繁杂、脉络不清(学得乱),课程与学生未来职业能力关联度不明确、学生学习主动性差(学得慢),课程内容同其他化类课程存在同质化问题、学生有学习疲惫感(学得烦)”的痛点问题。针对这三大痛点问题,基于“化繁为简,学以致用”的教学理念,以食品工业复杂问题为导向,结合食品科学技术前沿,构建“两问三分”循环式教学创新模式,采用“课前引导问,课后总结问”,利用“问题分解—内容分级—共同分析”的手段,实现对学生解决复杂问题能力提升,加强驱动循环式教学,提高学生工程实践能力,实现“三分辨事理,两问见真知”,深化拓展新工科建设,培养新时代卓越食品工程师。 The content of food chemistry covers the entire process of food from farmland to factories,and from factories to shelves.With the development of the concept of big food,future food,and new food processing technologies,food chemistry shoulders the important mission of exploring new paths for the development of food science and cultivating first class food professionals.There are pain points in traditional food chemistry teaching,such as complex course content,unclear learning context(learning disorder),unclear correlation between the course and students’future career abilities,poor student learning initiative(slow learning),homogenization of course content with other standardized courses,and students feeling tired of learning(learning annoyance).In response to these three major pain points,the teaching team is based on the teaching philosophy of“simplifying complexity and applying knowledge”,guided by the complex engineering problems in the food industry,and combined with the forefront of food science and technology,to construct a“two questions and three parts”circular teaching innovation model.Through“pre-class guidance questions,post class summary questions”and the use of“problem decomposition content grading joint analysis”methods,the ability of students to solve complex engineering problems is improved,the driving circular teaching is strengthened,the engineering practice ability of students is improved,and the“three distinctions between theory and two questions to see truth”is achieved,deepening the construction of new engineering disciplines and cultivating outstanding food engineers in the new area.
