摘要
乳酸菌作为一种益生菌,具有调节人体肠道菌群、降血糖、降血压、抗肿瘤以及预防癌症等多种功能。随着人们越来越注重对健康的追求,乳酸菌的应用已成为现在研究的热点和趋势。文章对乳酸菌的种类及其分类依据进行了概述,并详细介绍了乳酸菌在乳制品、肉制品及谷物制品加工、酿造工业、食品保鲜等食品行业的应用,以期为乳酸菌在食品领域的进一步发展提供理论依据,推动食品安全与人类健康共同进步。
As a kind of probiotics,lactic acid bacteria has many functions,such as regulating human intestinal flora,lowering blood sugar,lowering blood pressure,anti-tumor and preventing cancer.With people's increasing attention to health,the application of lactic acid bacteria has become a prominent topic and research trend.The species and classification basis of lactic acid bacteria are summarized in this paper.The application of lactic acid bacteria in dairy,meat and grain processing,brewing industry,food preservation and other food industries is also introduced in detail.It is hoped that this paper can provide theoretical basis for the further development of lactic acid bacteria in food field and promote the common progress of food safety and human health.
