我国蜂蜜抽检中真实性检验标准现状 被引量:4

Current Situation of Authenticity Test in Honey Sampling Inspection in China

摘要 掺伪造假是蜂蜜的主要质量安全问题,国内外对蜂蜜真实性检验的研究多为实验阶段,尚没有转化为普适性的、可以明确蜂蜜掺假的标准方法;抽检中应用的蜂蜜真实性检验标准问题多、更新慢,通过抽检手段无法有力震慑不法商家。本文总结蜂蜜抽检监测中真实性指标使用的检验方法现状,探讨高果糖淀粉糖浆、碳4-植物糖含量、果糖与葡萄糖、蔗糖、麦芽糖检验存在的问题,综述上述指标的研究进展,以期为蜂蜜真实性检验标准制修订提供思路,增加监管的有效性,提高国内蜂产品质量。 Adulteration is the main quality and safety problem of honey. At present, there is no universal standard document that can clarify the adulteration of honey. The honey authenticity test standard applied in the sampling inspection has many problems and slow update. The sampling inspection means cannot effectively deter illegal businesses. This paper summarizes the current situation of testing methods used for adulteration indicators, discusses the problems of testing high fructose starch syrup, carbon 4-plant sugar, fructose and glucose, sucrose, and maltose, and summarizes the research progress of the above indicators, so as to provide ideas for the formulation and revision of the authenticity inspection standard of honey, to increase the effectiveness of supervision, and to improve the quality of domestic bee products.
