摘要
基于蜂蜜内源性成分检验数据建立了的蜂蜜品质综合评价模型。通过对优质蜜、一般蜜、劣质蜜3个对照组121个样本中41个内源性成分的检验和单因素方差分析,确定了18个与蜂蜜品质变化相关的辨析指标,其中13个为正相关,5个为负相关,应用主成分分析建立蜂蜜品质综合评价模型。评价得分客观反映了蜂蜜样本的品质优劣,表明综合评价模型可以用作蜂蜜掺伪鉴别的重要参考。
A comprehensive evaluation model of honey quality based on endogenous components has been estab- lished. Forty one endogenous components were tested with 121 honey samples includeding 3 control groups, high- quality honey, common honey and poor-quality honey. According to the test result and One-Way ANOVA analysis, 18 honey quality related indicators were derived including 13 positively related indicators and 5 negatively related indica- tors. Using principal component analysis, a comprehensive evaluation model of honey quality was established. The e- valuation score reflected the quality of honey samples, suggesting that the comprehensive evaluation model can be used as an important reference for the identification of honey adulterations.
