上海市售螃蟹中砷、镉的富集调查及食用安全风险评价

Investigation on arsenic and cadmium accumulation and risk assessment of edible safety in crabs sold in Shanghai

摘要 为了解上海市售的淡水养殖的中华绒螯蟹与海水养殖的三疣梭子蟹中砷(As)、镉(Cd)的富集情况及食用风险,采用电感耦合等离子体质谱法(Inductively Coupled Plasma Mass Spectrometry,ICP-MS)分别测定三疣梭子蟹和中华绒螯蟹的性腺、肝胰腺、腿肌和胸肌中的As、Cd含量并运用目标危害系数(Target Hazard Quotient,THQ)和目标致癌风险(Target Cancer Risk,TR)进行食用安全风险评估。结果显示:三疣梭子蟹中As(8.813 mg/kg)、Cd(2.653 mg/kg)含量显著高于中华绒螯蟹中As(1.097 mg/kg)、Cd(0.149 mg/kg)含量;两种蟹中As、Cd的富集存在显著的性别差异;三疣梭子蟹与中华绒螯蟹的可食组织中,性腺与肝胰腺富集As的能力都显著强于腿肌和胸肌;Cd大部分富集在肝胰腺中。初步评估表明,长期食用As、Cd污染的三疣梭子蟹和中华绒螯蟹均存在不同程度的安全隐患,并且三疣梭子蟹对人体健康产生的潜在风险更大。本研究可为科学指导蟹类的食用以及精准评估蟹类水产品食用安全风险提供参考。 In order to investigate the accumulation of arsenic(As)and cadmium(Cd)in freshwater cultured Eriocheir sinensis and maricultured Patronus trituberculatus for sale in Shanghai and the edible safety risk,Inductively Coupled Plasma Mass Spectrometry(ICP-MS)was used to determine the contents of As and Cd in the gonads,hepatopancreas,leg muscles and pectoral muscles of Portunus trituberculatus and Eriocheir sinensis.The Target Hazard Quotient(THQ)and Target Carcer Risk(TR)were uesd to evaluate the edible safety risk.The results showed that the contents of As(8.813 mg/kg)and Cd(2.653 mg/kg)in Portunus trituberculatus were significantly higher than that of As(1.097 mg/kg)and Cd(0.149 mg/kg)in Eriocheir sinensis.There were significant gender differences in the accumulation of As and Cd in these two crabs.In the edible tissues of these two crabs,the gonads and hepatopancreas were more capable of accumulating than the leg muscles and pectoral muscles,and Cd was mostly concentrated in the hepatopancreas.Preliminary assessment indicated that long-term consumption of Portunus trituberculatus and Eriocheir sinensis contaminated by As and Cd had varying degrees of safe hidden risk,and the potential risk of Portunus trituberculatus to human health was greater.This research provides a basic reference for scientific guidance of crab consumption and accurate assessment of crab aquatic food edible risks.
