摘要
研究了婴儿配方奶粉的脂肪酸组成,以及不同脂肪来源对脂肪酸质量分数的影响。结果表明,21个市售婴儿配方奶粉饱和脂肪酸质量分数为38.55%±6.15%,单不饱和脂肪酸质量分数为40.28%±5.59%,多不饱和脂肪酸质量分数为21.16%±2.55%。脂肪来源对饱和脂肪酸和单不饱和脂肪酸的质量分数没有统计学差异(P>0.05),对多不饱和脂肪酸的质量分数有统计学差异(P<0.05)。饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸的质量分数与母乳的平均质量分数较接近,但油酸质量分数明显高于母乳的平均质量分数。本研究旨在为婴儿配方奶粉的脂肪酸设计提供一定的理论基础。
The fatty acid composition of commercial infant formula milk powder and the effects of different fat sources on fatty acid content were studied.The results showed that the contents of saturated fatty acids,monounsaturated fatty acids and polyunsaturated fatty acids in 21 kinds of infant formula milk powder were 38.55±6.15%,40.28±5.59%and 21.16±2.55%respectively.There was no significant difference in saturated fatty acids and monounsaturated fatty acids(P>0.05),but there was significant difference in polyunsaturated fatty acids(P<0.05).The content of saturated fatty acids,monounsaturated fatty acids and polyunsaturated fatty acids were close to the average content of breast milk,but the oleic acid content was significantly higher than the average content of breast milk.The purpose of this study is to provide a theoretical basis for the fatty acid design of infant formula.
