摘要
小麦在储藏过程中所含主要物质会自发进行一系列代谢作用,直接影响小麦储藏的稳定性、加工品质和食用品质。该文针对储藏期内评价小麦品质的生化指标相关研究进行综述,以期了解评价指标与储藏条件的关系、各指标之间的相关性,为准确选择灵敏指标、科学储藏小麦提供参考。
The main substances contained in wheat will spontaneously undergo a series of metabolic effects during storage,it will directly affect the storage stability of wheat,processing quality and food quality.Some biochemical indicators evaluating wheat storage quality were reviewed in order to understand the relationship between evaluation indexes and storage conditions,and the correlation among indexes,so as to provide reference for the accurate selection of sensitive indexes and scientific storage of wheat.
