摘要
通过对陕西省主要产区2016年产小麦进行储藏跟踪研究,并对比分析在夏季是否利用内环流控温技术研究温度对小麦储藏期间的品质变化影响,发现在常规储藏条件下,小麦的容重、湿面筋含量、呕吐毒素含量、气味、色泽均不会发生显著变化,而小麦的水分、不完善粒、杂质、面筋吸水率、发芽率会随着小麦的储藏时间发生变化,因而应重视小麦所处环境的温度、湿度等因素以及小麦本身的水分、面筋吸水率、发芽率等质量指标。
Through the storage tracking study of the wheat produced in 2016 in Shaanxi Province,and a comparative analysis of whether the internal circulation temperature control technology was used in summer to study the effect of temperature on the quality changes of wheat during storage,it was found that the unit weight,wet gluten content,DON content,smell,and color of wheat will not change significantly under normal storage conditions,while the moisture,imperfect grains,impurities,gluten water absorption,and germination rate of wheat will change with the storage time of wheat.Factors such as environmental temperature and grain temperature,as well as quality indicators such as the water content of wheat itself,gluten water absorption rate,and germination rate should be paid more attention.
