摘要
为了获得葡萄酒最佳的澄清条件,以壳聚糖为澄清剂,采用单因素实验法和响应面优化分析法,测定不同条件下葡萄酒的澄清度。结果表明,在30℃条件下,分子量7 kDa的壳聚糖使用0.6 g/L处理6 h,通过离心过滤可得透光率为86%以上的葡萄酒。
In order to obtain the best clarification conditions of grape wine,chitosan was used as the clarifier,and single factor experiments and response surface method were adopted for the determination of the clarity of wine under different conditions.The results showed that,when chitosan with the molecular weight of 7 kDa was used for the clarification of wine with the use level of 0.6 g/L for 6 h at 30℃,wine with the transmittance of more than 86%could be obtained by centrifugal filtration.
