稻谷产地分层通风对储粮品质的影响 被引量:3

Effect of Layered Ventilation on Grain Storage Quality in Rice Producing Area

摘要 新收获稻谷由于水分及温度高,入仓储藏时会发生霉变、虫害等,影响储粮品质,因此需要降低稻谷入仓前的含水量及温度。研究发现利用分层通风可显著降低稻谷水分含量,改善稻谷品质,其中出糙率上升15.1%,整精米率上升10.3%,爆腰增率相比室温储藏稻谷下降了3.0%。通风作业可以减少稻谷表面霉菌数量,从4.6×10^4CFU/g下降至5×10^3CFU/g,且脂肪酸值上升程度及色度变化程度显著减小,降低了因稻谷霉变、黄变而产生的损耗。分层通风对稻谷有降水作用,同时能够改善稻谷品质,有利于稻谷的储藏、加工与销售。 Due to the high moisture and temperature of newly harvested rice,mildew and insect pests will occur during storage,which will affect the stored grain quality.Therefore,it is necessary to reduce the moisture content and temperature of rice before warehousing.It was found that layered ventilation could significantly reduce the moisture content of rice and improve the quality of rice,among which the roughness rate increased by 15.1%,the whole rice rate increased by 10.3%,and the burst waist growth rate decreased by 3.0%compared with the storage at room temperature.Ventilation can significantly reduce the amount of mold on the surface of rice from 4.6×10^4 CFU/g to 0.5×10^4 CFU/g,the degree of the increase of fatty acid value and color change can be significantly reduced,thus reducing the loss caused by mildew and yellowing of rice.Layered ventilation has the effect of reduction of moisture in rice,and improves the quality of rice,which is conducive to the storage,processing and marketing of rice.
