摘要
近年来,食品安全问题不断发生,引起了人们广泛的关注。寻找一种天然、无公害的食品添加剂已经成为人们的需求。红曲色素是中国传统的天然色素,具有营养、无毒等特性,是红曲霉次级代谢产物,并且可以作为食品添加剂被广泛地应用于各种食品行业中。
In recent years,food safety problems continue to occur,and have attracted extensive attention. It has become a demand for people to find a natural and pollution-free food additive. Monascus pigment is a traditional Chinese natural pigment. It has the characteristics of nutrition,non-toxicity and so on. It is a secondary metabolite of monascus,and can be widely apply to various food industries as a food additive.
