摘要
探讨铁皮石斛酵素所含氨基酸成分、抗氧化活性及内酶活力,以制备好的铁皮石斛酵素为原料,应用全自动氨基酸仪分析成分,采用FRAP法、DPPH法及ABTS^+法评价其抗氧化活性,并对SOD抑制以及脂肪酶活力和淀粉酶活性进行了研究。结果表明,铁皮石斛酵素含有除色氨酸以外的8种人体必需氨基酸,且其肌肽含量高于牛肉所含的肌肽量,具有良好的总抗氧化能力及清除DPPH自由基、ABTS自由基的能力,能较好地抑制SOD,并有一定的淀粉酶和脂肪酶活力。
This study aimed to investigate the amino acid composition in Dendrobiumofficinale Kimura et Migo enzyme, the antioxidant activity and activities of several enzymes in it. The composition of Dendrobiumofficinale Kimura et Migo enzyme was analyzed and the antioxidant activity was evaluated through total reducing capacity, 3-ehtytbenzothiazolin-6-sulfnic acid diammonium salt (ABTS) scavenging, and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging assays. Its inhibition to SOD and the activities of lipase and amylse were studied in this paper. The result showed Dendrobiumofficinale Kimura et Migo enzyme containes a large amount of amino acids, which have a good total antioxidant capacity exhibited DPPH- radical scavenging activity, ABTS. radical scavenging activity, exhibit SOD well, also displays a certain degree of activity the amylase and lipase.
