菜籽多酚Canolol研究进展 被引量:13

摘要 Canolol是油菜籽和菜籽油中的主要多酚之一,由油菜籽中天然存在的芥子酸在高温高压下脱酸转化而成。Canolol具有很强的抗氧化活性及抗诱变、抗癌等生理活性,因此具有重要的医药和营养价值。本文阐述了Canolol的发现、结构鉴定与定量检测、影响其形成的关键因素、在菜籽油精炼过程中的变化及Canolol的主要生理活性等,为油菜籽高值化加工技术发展和高品质、高附加值菜籽油产品以及高效天然抗氧化剂的开发与应用提供参考依据。 Canolol is one of the main phenol compounds in seeds and oil from rapeseed. It is formed under heating and pressing of processed rapeseed by decarboxylation of natural sinapic acid in seeds. Canolol was proved to have good antioxidative,antimutagenic,and anticancer properties. Therefore,it has important potential in medical health,and other products with high added value. This paper reviewed the research on canolol,including identification,determination,formation,properties and changes during refining.
