摘要
乳酸菌胞外多糖是乳酸菌在生长代谢过程中分泌到细胞壁外、常渗于培养基中的一类天然生物高分子聚合物。乳酸菌胞外多糖不仅具有多种生物活性,而且还可作为食品增稠剂和稳定剂等,在改善发酵乳品质地和流变学特性等方面发挥重要作用。但是至今,乳酸菌胞外多糖的产量依旧较低,从而限制了其广泛应用,因此深入了解影响乳酸菌胞外多糖产量的因素具有深远的意义。文章综述了菌体自身遗传特性、培养基成分、培养条件及提取条件对胞外多糖产量的影响,并探讨提高其产量行之有效的措施,以期推动乳酸菌胞外多糖的研究和应用。
Exocellular polysaccharides (EPS) are natural biological polymers, which are composed of sugar residues and secreted by lactic acid bacteria (LAB) into surrounding environment. It has unique physical properties and physiological functions, moreover, can be widely used in foods as thickener and stabilizer, improving the rheology and texture of fermented dairy products. However, low yields of in situ production of exopolysaccharide are potential barrier for the industrial applications, thus providing insights into the factors which infiuence the production of exopolysaccharide produced by lactic acid bacteria has far-reaching significance. This overview provides information about effects of lactic acid bacteria strains, medium composition, fermentation conditions, extraction conditions on yield. Importantly, we also put forward the effective ways to promote the research and application of exopolysaccharide.
