摘要
神秘果含有奇特的神秘果素,是一种变味糖蛋白,可以改变人的味觉,使原本具有酸味的食物变成甜味。文章对神秘果功能成分和药理活性、神秘果素的制备以及开发利用现状展开系统的论述,并展望其应用前景,旨在为今后神秘果的综合利用提供理论基础。
Miraculin is a taste-modifying glycoprotein extracted from Synsepalurn dulcificum(S, dulcificum), which has the unusual ability to modify a sour taste into a amazingly excellent sweet taste in the mouth has been thoroughly exposed to the fruit's mucilaginous pulp. The functional ingredient and medicinal value of S. dulcificum, extraction of miraculin, and their current utilization status and development prospect were systematically review in this paper for providing a reference for further research and development.
