摘要
为提高辣椒的贮藏保鲜品质,打破辣椒产销的区域性和季节性束缚,缓解辣椒产销之间的矛盾,增加农民收入,推动辣椒产业的顺利发展,笔者从辣椒常用的保鲜技术、贮藏特性及其品质变化等方面对辣椒贮藏保鲜的方法进行了综述,并对辣椒保鲜技术的发展趋势提出了建议。
In order to improve storage quality of pepper,break the regional and seasonal restraints of pepper production and marketing,relieve contradiction between pepper production and marketing,increase peasants' income and promote industrial pepper development,in this paper the common preservation technology,storage characteristics and quality changes of pepper were reviewed and the development tendency of pepper storage technique was proposed as well.
