壳聚糖-魔芋粉复合涂膜对长白楤木嫩芽保鲜效果的研究 被引量:8

摘要 为了研究壳聚糖-魔芋粉复合保鲜液对长白楤木嫩芽的保鲜效果,分别以0.25%、0.5%、0.75%的壳聚糖与0.4%的魔芋粉复配制成保鲜液,对长白楤木嫩芽进行涂膜处理,4℃条件下贮藏,测定贮藏期间长白楤木嫩芽感官品质、失重率、叶绿素、Vc、可滴定酸、丙二醛(MDA)、过氧化物酶(POD)和多酚氧化酶(PPO)等理化指标的变化。结果表明:0.5%的壳聚糖与0.4%的魔芋粉复合保鲜液对贮藏期间长白楤木嫩芽保鲜效果最显著,使长白楤木嫩芽的感官品质保持良好,明显降低长白楤木嫩芽的失重率,延缓叶绿素、Vc、可滴定酸和MDA含量的变化,抑制长白楤木嫩芽中POD活性、PPO活性,可使长白楤木嫩芽长达18 d的保鲜期。因此,0.5%壳聚糖与0.4%魔芋粉复合保鲜液在长白楤木嫩芽保鲜方面具有较好的应用价值。 In order to study fresh-keeping effect of chitosan and konjak powder composite fresh-keeping solution on Aralia continentalis kitagwa sprouts,0.25%,0.5%,0.75%chitosan and 0.4%konjak powder were mixed to prepare preservative solution.Aralia continentalis kitagwa sprouts were coated and stored at 4℃.The changes in physical and chemical indicators such as sensory quality,weight loss rate,chlorophyll,Vc,titratable acid,malondialdehyde(MDA),peroxidase(POD)and polyphenols oxidase(PPO)of Aralia continentalis kitagwa sprouts were measured during storage.The results showed that 0.5%chitosan and 0.4%konjak powder composite preservation liquid had the most significant effect on the preservation of Aralia continentalis kitagwa sprouts during storage,which kept the sensory quality of Aralia continentalis kitagwa sprouts well and significantly reduced the growth of Aralia continentalis kitagwa sprouts.The changes of weight loss rate,chlorophyll,Vc,titratable acid and MDA,and inhibits POD activity and PPO activity in Aralia continentalis kitagwa sprouts.It can make the Aralia continentalis kitagwa sprouts have a shelf life of 18 d.Therefore,0.5%chitosan and 0.4%konjak powder composite preservation liquid have good application value in preservation of Aralia continentalis kitagwa sprouts.
