摘要
草酸是一种代谢产物,广泛分布于植物、动物及真菌体中。许多研究表明外源草酸不仅有效延缓果实的成熟衰老进程,而且有效控制采后果实的病情、腐烂及褐变发生,对果实采后保鲜效果明显。草酸处理降低果实的细胞壁代谢、提高抗氧化力、抑制呼吸强度和乙烯释放量等生理效应与延缓果实采后成熟过程相关。草酸对水果的一些病原菌具有直接抑菌作用,而且诱导提高采后果实的系统抗病性,从而抑制果实采后腐烂发生。当前,外源草酸在水果采后保鲜中的应用研究已引起重视。我们综述了外源草酸对水果采后贮藏保鲜的效应及其作用机制,并对进一步开展相关研究作出了展望。
Oxalic acid (OA), as a final metabolic product, is ubiquitously occurring in plants, fungi, and animals. Recently, the application of oxalic acid for postharvest storage of fruit has caused much attention, as exogenous oxalic acid is identified as having many functions such as delaying the ripening process, reducing decay incidence and controlling the browning in fruit by many researchers. The physiological effects of OA-treatment on decreasing cell wall metabolism, improving antioxidation capability, and inhibiting respiration and ethylene production contributed to delaying the ripening process. In addition, OA-treatment not only inhibited the development of post-harvest pathogens, but also induced systemic resistance in postharvest fruit, thus decreased fruit decay during storage. In this paper, the effects of exogenous oxalic acid on postharvest fruit and its mechanism were summarized, and the further research in relation to oxalic acid on fruit that needs to be addressed was prospected as well.
