摘要
结合国内外研究状况,介绍了高压脉冲电场的脉冲发生器研究现状、主要机理学说、以及在食品工业上的可行性应用及展望。
Unifies the domestic and foreign present situations, the pulse generating device of high-voltage pulsed electric field （HPEF）, main theories of acting mechanism of HPEF and the possible scope and prospects of its application are introduced in the paper.
