摘要
分析测定了番薯蜂花粉的营养成分,结果表明:蛋白质含量为23.275%;可溶性糖的含量明显高于其他花粉,其中果糖10.48%,葡萄糖6.75%,蔗糖6.47%,麦芽糖7.53%.在测定的7种脂肪酸中,亚油酸相对含量最高,PUFA/SF比值为2.104.3种测出的黄酮类化合物含量分别为:芦丁(33.23mg/100g),桑色素(18.24mg/10g),坎菲醇(11.37mg/100g).蛋白质氨基酸总量为27.457%,必需氨基酸含量为11.165%,E/T比为40.04%,限制性氨基酸为亮氨酸.必需氨基酸的组成及比值与(FAO/WHO)(1973)提出的理想蛋白质中人体必需氨基酸的模式接近.游离氨基酸总含量为549.128mg/100g.在测定的11种维生素中,维生素C的含量最高,在53.31mg/100g.矿质元素依照含量的高低依次为P>K>Ca>Si>Mg>Fe>Zn>Na>Al>Mn>Cu>Sr>B>Ti>Mo.>Se.
The article mainly dealt with the nutrient contents in bee pollen of Impomoea batatas for the first time. The results showed that the bee pollen contained protein 23.275%. The contents of soluble sugar very hight(fructose 10.48%,glucose 6.75%,sucrose 6.47% and maltose 7.5%). The relative content of linoteic acid(24.745) is the highest in seven fatty acids. The ratio of total content of polyunsaturated fatty acids(PUFA) to saturated fatty acids (SF) is 2. 104. There are three flavonoides, including rutin(33. 23mg/100g).morin (18.24mg/100g)and kaempferol (11.37mg/100g).Total hydrolyzed andno acids(TAA) 27.457%.Essential andno acids (EAA) 11. 165%.Amino acids score(ASS) 94.8.First liciting amino acid is LEU. The contents of vitamins are sirmlar to that others.but content of vitamin C(53. 3mg/100g)is higher in the bee pollen. The quantity of the sixteen mineral elements: P>K>Ca>>Si>Mg>Fe>Zn>Na>Al>Mn>Cu>Sr>B>Ti>Mo>Se.
