摘要 本文主要讨论以下几方面问题 :①酸沉方式和条件对蛋白沉淀颗粒大小和强度的影响 ;②酸沉大豆蛋白卧螺分离效率的影响因素 ;③喷雾干燥过程中热风温度、热风分配对蛋白质功能性质、产品堆积密度的影响 ,高压喷嘴雾化能力的影响因素。
