摘要
本研究通过对米厂碾米工艺过程的实测和在实验室进行碾米试验 ,用碾白率的变化表示碾米过程 ,考察了相同稻谷材料在米厂实际碾米工艺和实验室碾米试验的碎米发生情况 ,两者比较的结果表明 :实验室碾米试验结果和米厂碾米工艺实测数据的可比性较好 ,实验室碾米试验结果对米厂实际碾米工艺具有参考应用价值。
A comparative study on broken rice rate in rice milling between rice mill and lab was conducted. The broken rice rates and white rice yields in the rice milling process for the same raw material were investigated and compared. The results show that the data from rice mill and from lab are comparable. The data from lab milling test has referable guiding value for milling technology in rice mill.
