摘要
以燕窝、透明质酸钠、海洋鱼胶原蛋白肽为主要原料,冰糖、琼脂、纯化水为辅料,研制一种燕窝健康食品。其主要工艺包括原料验收、燕窝泡发、清洗、混合定量、灌装、灭菌、包装检验等。通过正交试验及感官评定,确定产品最佳配方为:每70 g产品含有透明质酸钠90 mg、胶原蛋白1.5 g、燕窝2 g、琼脂150 mg、冰糖粉7g,其余为水。研究产品对人体皮肤水分改善及安全性。结果表明,最佳配方研制透明质酸胶原蛋白冰糖燕窝产品对改善人体皮肤水分有显著作用,且对身体健康没有影响,试验组皮肤含水量平均值由试验前的8.73±1.10提高到9.65±1.11。
A health food for cubilose was developed taking cubilose, sodium hyaluronate and marine collagen oligopeptide as raw material, using crystal sugar, agar and water as auxiliary materials. Its main processes include raw material check, the soaked of cubilose, cleaning, mixed and quantitative, filling, sterilizing, package inspection, et al. The optimal formula of the product was mainly investigated by orthogonal test and sensory evaluation, every 70 g product contains 90 mg sodium hyaluronate, 1.5 g marine collagen oligopeptide, 2 g cubilose, 150 mg sodium hyaluronate, and 7 g crystal sugar, and the rest was water. The improvement and safety of the product to human skin moisture were also studied. The results showed that the product developed by the best formula had a significant effect on improving human skin moisture, and it had no effect on health. The average level of skin moisture in trail group was increased from 8.73±1.10 to 9.65±1.11.
