一起金黄色葡萄球菌引起的食源性疾病暴发事件调查 被引量:4

An investigation of foodborne diseases outbreaks caused by Staphylococcus aureus

摘要 目的分析农村群宴食源性疾病暴发事件的原因,为此类事件的处理提供依据。方法按照《食品安全事故流行病学调查技术指南(2012版)》,采用现场流行病学调查方法进行病例对照研究,按照GB 4789.10-2016和WS/T80-1996进行病原菌的分离培养,并对检出菌进行血清型鉴定。结果此次食源性疾病暴发事件与8月30日中午农村群宴有关,患病29例;潜伏期短、起病急,临床症状以呕吐、腹痛等为主;可疑食品为烤鸭和香辣螃蟹;从26份标本中检出15株金黄色葡萄球菌,其中4株进行肠毒素检测均检出A型金黄色葡萄球菌肠毒素,未检出其它肠道致病菌。结论加强农村群宴的监督管理,避免该类事件再次发生,以保障人民群众食品安全。 Objective To analyze the causes of foodborne disease outbreaks in rural areas,and to provide a basis for dealing with such incidents.Methods According to the Technical Guidelines for Epidemiological Investigation of Food Safety Accidents(2012 Edition),case-control studies were conducted using on-site epidemiological investigation methods,and pathogens were isolated and cultured according to GB 4789.10-2016 and WS/T 80-1996.Serotype identification was performed.Results The foodborne disease outbreak was related to the rural group feast at noon on August 30,and 29 cases were sick.The disease had a short incubation period and the onset was rapid.The clinical symptoms were mainly vomiting and abdominal pain.Suspicious foods were roast duck and spicy crab.15 strains of Staphylococcus aureus were detected from the 26 samples,of which 4 strains were detected in the enterotoxin test,A-type Staphylococcus aureus enterotoxin was detected.No other intestinal pathogens were detected.Conclusion The supervision and management of rural self-organized group banquets should be strengthened to prevent such incidents from happening again to ensure food safety for the people.
