摘要
以决明子、枸杞、金银花3种药食同源材料为原料,通过单因素和正交试验研制一种具有降血脂功效的复合饮料。结果表明:该复合饮料的最佳配方为决明子提取液14%、金银花提取液6%、枸杞提取液10%、甜味料(白砂糖和蜂蜜的比例为2∶3)10%;添加0.2%海藻酸钠,4℃储藏时复合饮料稳定性最好。该功能性复合饮料呈棕黄色,澄清透明,酸甜适中,香气柔和协调。
Cassia seed, wolfberry and honeysuckle as the main raw materials, a complex functional beverage drinks with hypolipidemic effect was developed by single factor and orthogonal experiment. The optimal formula was obtained as follows:14%cassia seed extraction, 6%wolfberry extraction, 10%honeysuckle extraction and 10%composite sweetener(the ratio of sugar and honey was 2:3). Composite beverage displays better sta-bility, when adding 0.2 % sodium alginate and storing at 4 ℃. A kind of composite beverage was developed successfully with brown yellow color, clear and transparent, sweet and sour moderate and a soft coordination aroma.
