摘要
目的建立对熟肉制品中日落黄、胭脂红和诱惑红三种合成色素同时测定的方法。方法样品采用无水乙醇-氨水-水(7:2:1)提取,加正己烷去除脂肪,氮吹后定容,用高效液相色谱法测定。经Symmetry Shield RP18柱分离,甲醇-0.02 mol/L乙酸铵溶液梯度洗脱,检测波长为508 nm。结果本方法的相对标准偏差(n=6)在0.92%~3.2%之间,平均回收率在86.4%~99.1%之间,检出限在0.005~0.008 mg/kg之间。结论本方法灵敏度高,分离效果好,结果稳定可靠,适用于熟肉制品中日落黄、胭脂红和诱惑红的同时测定。
Objective To establish a method of simultaneous determination of sunset yellow, carmine and allura red up to three synthetic pigments in cooked meat products.Methods The samples were extracted by the anhydrousethanol-ammonia-water solution (7:2:1), the fat was eliminated by hexane, then blown by nitrogen, analyzed by high performance liquid chromatography. The samples were separated by SymmetryShield RP18 column, by gradient elution using a mobile phase made up of methanol and 0.02 mol/L amm-onium acetate, and detected at 508 nm.Results The relative standard derivations (n=6)were between 0.92%~3.2%, the recoveries were between 86.4%~99.1%, the detection limits were between 0.005~0.008 mg/kg.Conclusion This method is sensitive, efficient, reliable and suitable for the determination of synthetic pigments in cooked meat products.
