摘要
利用大型真空罐进行胡萝卜、青刀豆的单层干燥试验。综合考虑干燥速度和色素指标,得出胡萝卜和青刀豆的较佳罐温、胡萝卜较佳装载系数、物料层位置以及料块切割方式。讨论了低真空状态下温度不匀、切分对干燥的影响及膨化产生条件。
The big vacuum vessel in a food processing factory was used for the drying tests of carrot
and sword bean at different temperatures in the vessel with different loading coefficients,dif-
ferent positions of the layer and different cutting methods.The better values were obtained
under the different conditions.The influence of temperature and cutting on drying,the puff
condition and the effect of the pretreatments on the pigment were discussed in this paper.
