摘要
牡蛎壳(蚝壳)作为牡蛎生产中的一种贝类废料,在牡蛎养殖、加工生产各个环节存在回收利用效率低下、废弃易造成环境污染等问题。开展贝类废料的资源化利用及高值资源化研究,并探讨其循环与再循环的可行性利用途径,对缓解中国贝类资源的环境问题具有重要的现实意义。通过对国内外相关文献的梳理和分析,介绍了牡蛎壳的结构和成分的重要特征,以及回收牡蛎壳在医疗、工业和农业领域中的用途和重要地位。重点阐述了牡蛎壳在食品领域的应用进展,提出了未来含牡蛎壳成分食品的发展趋势。在此背景下,开展有关牡蛎壳综合利用研究有利于开发用于生产功能性食品的牡蛎壳加工技术,为牡蛎壳产品的进一步研究和商业化应用提供参考。
Oyster shells are a kind of shellfish waste generated during the production and processing of oysters.Their ineffective utilization and recycling in production and consumption lead to significant environmental pollution and resource wastage.Studying the recycling and valuable utilization of discarded oyster shells,as well as seeking practical methods for their recovery,can both mitigate environmental pollution stemming from oyster shells and yield significant economic gains.By combing and analyzing the relevant literature at home and abroad,this paper provided a comprehensive overview of the fundamental structure,material composition of oyster shells.As well as their resourceful applications in medicine,industry,and agriculture.Especially,the article focused on a comprehensive review of oyster shells in the food science and suggests possible future trends in food products containing oyster shell ingredients.Furthermore,based on this understanding,technologies for processing functional foods from oyster shells have been developed,providing a basis for further research and commercial applications of oyster shells.
