摘要
为了建立一种高效且精准的食品中酚类防腐剂及抗氧化剂检测方法,将市售大豆油作为检测对象,采用高效液相色谱法对富马酸二甲酯、没食子酸丙酯、2,6-二叔丁基对甲基苯酚、叔丁基对羟基苯酚及叔丁基对苯二酚5种目标化合物展开系统检测。结果表明,目标化合物在质量浓度为0.5~100.0 mg·L^(-1)时线性关系良好(相关系数大于0.996),最低检出限为0.3~1.5 mg·kg^(-1),加标回收率为89.12%~97.45%,相对标准偏差小于6%;实际样品检测仅检出微量2,6-二叔丁基对甲基苯酚(0.18~0.25 mg·kg^(-1)),符合国家标准。该方法适用于复杂油脂基质中痕量酚类添加剂的精准测定,为食品安全监管提供了可靠的技术支持。
In order to establish an efficient and accurate detection method for phenolic preservatives and antioxidants in food,commercially available soybean oil is taken as the detection object,five target compounds,namely dimethyl fumarate,propyl gallate,2,6-di-tert-butyl-p-methylphenol,tert-butyl-p-hydroxyphenol and tertbutylhydroquinone,are systematically detected by high performance liquid chromatography.The results show that the linear relationship of the target compound is good within the mass concentration range from 0.5 mg·L^(-1) to 100.0 mg·L^(-1)(correlation coefficient greater than 0.996),the minimum detection limit is from 0.3 mg·L^(-1) to 1.5 mg·kg^(-1),the spiked recovery rate is from 89.12%to 97.45%,and the relative standard deviation is less than 6%.The actual sample test only detected trace amounts of 2,6-di-tert-butyl-p-methylphenol(0.18 mg·kg^(-1) to 0.25 mg·kg^(-1)),which conformed to the national standard.This method is applicable to the precise determination of trace phenolic additives in complex lipid matrices,providing reliable technical support for food safety supervision.
