摘要
旨在比较分析优质地方鸡——广西黑凤鸡生产的不同蛋壳颜色鸡蛋的品质差异。在黑凤鸡53周龄所产的蛋中随机选取绿、粉、棕三种颜色蛋壳的蛋各30枚,检测其蛋重、蛋形指数、蛋壳强度、蛋壳厚度、蛋黄高度、蛋白重、哈氏单位及蛋黄颜色等指标,通过比较分析其差异。结果显示,绿壳蛋的蛋重、蛋白重与棕壳蛋差异显著(P<0.05),但与粉壳蛋无显著差异(P>0.05);绿壳蛋的蛋黄颜色与粉壳蛋差异显著(P<0.05),但与棕壳蛋无显著差异(P>0.05);绿壳蛋的蛋黄高度显著高于粉壳蛋和棕壳蛋(P<0.05),粉壳蛋与棕壳蛋差异不显著(P>0.05)。三种颜色鸡蛋均符合鸡蛋标准范围,品质优良。综合来看,绿壳蛋品质最佳。本研究为地方鸡种质资源科学保护、合理开发及利用提供有价值的基础数据参考。
The aim was to compare and analyze the quality differences of eggs with different shell colors produced by Guangxi Black-feathered chickens.Thirty eggs each with green,pink and brown shell colors were randomly selected from the eggs laid by Black-feathered chickens at 53 weeks of age.The egg weight,egg shape index,eggshell strength,eggshell thickness,yolk height,albumen weight,Haugh unit and yolk color were measured and compared to analyze the differences.The results showed that the egg weight and albumen weight of green shell eggs were significantly different from those of brown shell eggs(P<0.05),but there was no significant difference compared with pink shell eggs(P>0.05);the yolk color of green shell eggs was significantly different from that of pink shell eggs(P<0.05),but there was no significant difference compared with brown shell eggs(P>0.05);the yolk height of green shell eggs was significantly higher than that of pink shell eggs and brown shell eggs(P<0.05),while there was no significant difference between pink shell eggs and brown shell eggs(P>0.05).All three types of eggs met the standard range of eggs and were of excellent quality.Overall,the green-shelled eggs have the best quality.This study provides valuable basic data references for the scientific protection,rational development and utilization of local chicken germplasm resources.
