摘要
椴树蜜源自东北森林,采集自未受污染的自然环境,其优良的品质使其成为健康食品的首选。它不仅有助于调节胃肠功能,促进胃酸分泌和食物消化,还能增强胃肠蠕动,对消化不良和习惯性便秘具有一定改善效果。燕麦饮则因其富含膳食纤维和低热量的特性而广受欢迎。燕麦饮中的膳食纤维能够促进肠道蠕动,助力体内毒素排出,预防便秘,并对肠胃消化功能发挥温和的调节作用。本实验通过单因素正交实验将椴树蜜与燕麦相结合,对发酵温度、椴树蜜添加量和发酵剂接种量进行工艺优化,得到最佳生产工艺发酵温度32℃、椴树蜜添加量2.0%、发酵剂接种量4.0g/L,为椴树蜜与白城特色杂粮相结合发展,提供了新思路。
The honey of the oak tree comes from forests in Northeast China and is collected from unpolluted natural environments.Its excellent quality makes it the preferred choice for healthy food.It not only helps regulate gastrointestinal function,promote gastric acid secretion and food digestion,but also enhances gastrointestinal peristalsis,which has a significant improvement effect on indigestion and habitual constipation.Oat drinks are widely popular due to their high content of dietary fiber and low calorie characteristics.The dietary fiber in oat drinks can promote intestinal peristalsis,assist in the elimination of toxins from the body,prevent constipation,and have a mild regulatory effect on gastrointestinal digestive function.Through a single factor orthogonal experiment,the combination of oak honey and oats was optimized for fermentation temperature,oak honey addition amount,and fermentation agent inoculation amount.The optimal production process was obtained with a fermentation temperature of 32℃,oak honey addition amount of 2.0%,and fermentation agent inoculation amount of 4.0 g/L.This provides a new idea for the development of the combination of oak honey and Baicheng specialty grains.
