稻米色素提取理化性质及功能活性研究进展

摘要 稻米作为人类的主要食物之一,种类繁多且营养丰富,2021年我国的稻谷总产量约为21284万t,位居世界第一。稻米的营养成分与功能组成特性对人类健康具有重要的作用。稻米皮是稻米加工的副产物,有原料便宜易得的特点,但由于利用率低,易造成资源的浪费,目前大多应用于饲料产业或肥料。当前,研究人员主要对米皮的营养价值进行了广泛探索,利用稻米开发功能产品已较为丰富,但围绕稻米色素综合开发与利用的研究较少。因此,通过对稻米色素的提取、结构、性质与功能活性进行了归纳分析,可为稻米色素开发与利用提出依据和新的应用思路。 As one of the main foods of human beings,rice is rich in nutrients and varied,and the total output of China's rice in 2021 is about 21284 million tons,ranking first in the world.The nutritional composition and functional composition characteristics of rice play an important role in human health.Rice husk is a by-product of rice processing,which considered to be a cheap and easy availability raw material.However,due to the low utilization rate,it is easy to cause waste of resources.At present,it's mostly used in the feed industry or as fertilizer.The current research mainly explores the nutritional value of rice husk,the development of functional products by using rice has been relatively rich,but there are few studies on the comprehensive development and utilization of rice pigment.Therefore,this study summarized and analyzes the extraction,structure,properties and functional activities of rice pigments,which could provide a basis and new application ideas for the development and utilization of rice pigments.
