线性约束的混料设计优化挤压高膳食纤维重组米配方

Optimization of the formulation of extruded recombinant rice with high dietary fiber by linear constrained mixture design

摘要 以碎米粉为主料、大豆膳食纤维和抗性糊精为辅料,采用双螺杆挤压技术制备高膳食纤维重组米。运用混料试验设计优化原料配比,同时借助多元线性回归及二项式拟合建立综合评分指标与因素间的数学模型,预测最优高膳食纤维重组米配比。结果表明:最优配方为以混合粉总质量为基准,碎米粉添加量88.0%、大豆膳食纤维添加量8.0%、抗性糊精添加量4.0%,在此条件下制得的高膳食纤维重组米的综合评分为2.17±0.12,膳食纤维含量为9.61 g/100 g,高于高膳食纤维食品标准规定的6 g/100 g,且口感较好。 Using broken rice powder as main material,soybean dietary fiber and resistant dextrin as excipients,the recombinant rice with high dietary fiber was prepared by twin-screw extrusion technology.The mixing experiment was designed to optimize the ratio of raw materials,and the mathematical model between the comprehensive score index and factors was established by means of multiple linear regression and binomial fitting to predict the optimal ratio of recombinant rice with high dietary fiber.The results showed that the optimal formulation was based on the total mass of mixed powder,with the addition of broken rice powder 88.0%,soybean dietary fiber 8.0%and resistant dextrin 4.0%.The comprehensive score of the recombinant rice prepared under these conditions was 2.17±0.12,and the dietary fiber content was 9.61 g/100 g,exceeding the standard of 6 g/100 g for high dietary fiber foods with good taste.
