基于多元场景化方法推动生物化学及食品化学教学内容改革实践与探索

Promoting Reform Practice and Exploration of Biochemistry and Food Chemistry Teaching Content Based on Multi-scene Method

摘要 生物化学和食品化学作为食品课程与工程的专业核心课,在知识体系上具有较强的关联性,而现有教学改革往往关注独立的一门课程,普遍存在课程体系关联不强,课程教学延续性和能力互补不足等情况。在工程教育认证的指导思想下,本着促进食品科学与工程专业新工科人才培养目标,我们通过构建多元场景化的教学方法,建立生物化学与食品化学的教学内容和教学体系的改革创新,创新性的创设场景关联、素养模块提升等三个方面,通过对学生的问卷调查和多元考核结果表明,新的教学模式对于学生学习兴趣、强化学生的历史责任感和学生学习成效取得了显著的提高,也为食品科学与工程及相关专业课程体系改革提供了新的方法与思路。 Biochemistry and Food Chemistry,as the core subjects of the food curriculum and engineering discipline,exhibit a strong correlation within the knowledge system.However,the current educational reforms often focus on individual courses,leading to common issues such as weak interconnection within the curriculum system,a lack of continuity in teaching,and insufficient complementary capabilities.Guided by the principles of engineering education certification and with the aim of fostering the cultivation of new engineering talents in Food Science and Engineering,we have established an innovative reform of the teaching content and system for Biochemistry and Food Chemistry through the construction of multifaceted scenario-based teaching methods.This includes the innovative creation of scenario relevance,enhancement of competency modules,and other aspects.The results from student questionnaires and diverse assessment methods indicate that the new teaching model has significantly improved students'interest in learning,strengthened their sense of historical responsibility,and enhanced their learning outcomes.Additionally,it has provided new methods and ideas for the reform of the curriculum system in Food Science and Engineering,as well as related majors.
