摘要
目的:为提高食品中脂肪酸的分析效率,建立了一种采用气相色谱法测定食品中37种脂肪酸含量的快速分析方法。方法:采用Agilent J&W DB-FastFAME毛细管柱(30 m×0.25 mm,0.25μm),进样器温度250℃,检测器温度260℃,程序升温(初始温度80℃,持续0.5 min,40℃·min^(-1)升至165℃,保持1 min;4℃·min^(-1)升至230℃,保持4 min),分流比100∶1,进样体积1.0μL。通过面积归一化法计算食品中37种脂肪酸甲酯的含量。结果:37种脂肪酸甲酯在23 min内均可有效分离,加标回收率为85.0%~106.2%,精密度和稳定性均良好。与GB 5009.6—2016第三法无明显差异,且分析时间较GB 5009.6—2016第三法(82.5 min)缩短了约71%,大大提高了脂肪酸的分析效率。结论:该方法精密度高、快速、准确,能满足食品中多种脂肪酸含量的测定。
Objective:To improve the analysis eff i ciency of fatty acids in food,a rapid analysis method using gas chromatography was established to determine the content of 37 fatty acids in food.Method:Agilent J&W DBFastFAME capillary column(30 m×0.25 mm,0.25μm)was used.Sample injector temperature of 250℃,detector temperature of 260℃,programmed heating(initial temperature of 80℃for 0.5 min,40℃·min^(-1) to 165℃for 1 min,4℃·min^(-1) to 230℃for 4 min),split ratio of 100∶1,injection volume of 1.0μL.Calculate the content of 37 fatty acid methyl esters in food using area normalization method.Result:37 types of fatty acid methyl esters can be effectively separated within 23 minutes,with a recovery rate of 85.0%to 106.2%,and good precision and stability.There is no significant difference compared to the third method of GB 5009.6—2016,and the analysis time is shortened by 71%compared to the third method of GB 5009.6—2016(82.5 min),greatly improving the efficiency of fatty acid analysis.Conclusion:This method has high precision,speed,and accuracy,and can meet the determination of various fatty acid contents in food.
