摘要
采用整体法评定食品中大肠菌群测量不确定度,为食品微生物定量检测提供一种不确定度评定方法。依据GB 4789.3—2016《食品安全国家标准食品微生物学检验大肠菌群汁数》中平板计数法,以人工污染大肠菌群猪肉样品为例,分析样品测量过程中引入的测量不确定度,利用整体法对其数据的离散型进行评定。本次评定的测量不确定度结果报告为1.0×10^(3) CFU/g[8.1×10^(2),1.3×10^(3)],k=2。大肠菌群测量不确定度的主要来源为再现性条件下重复测量引入的不确定度。
To establish a case study of evaluating the uncertainty of coliform group in food by whole method,and to provide a method for evaluating the uncertainty of quantitative detection of food microorganisms.According to GB 4789.3—2016 plate counting method,taking pork samples artificially contaminated with coliform bacteria as an example,the measurement uncertainty introduced in the sample measurement process was analyzed,and the discrete type of the data was evaluated using the overall method.The measurement uncertainty of this assessment was reported as 1.0×10^(3)CFU/g[8.1×10^(2),1.3×10^(3)],k=2.The main source of uncertainty in coliform group measurement is the uncertainty introduced by repeated measurement under reproducible conditions.
