摘要
为了深入研究和充分利用祁连牦牛乳产品,于2023年5月中旬采集了10头祁连牦牛的乳样,使用多功能乳品成分快速分析仪、全自动氨基酸分析仪和气相色谱仪等设备进行了乳品质量、氨基酸含量和脂肪酸组成检测。结果表明,祁连牦牛乳的主要营养成分包括酪蛋白(3.83%)、乳蛋白(4.79%)、乳脂肪(7.80%)、乳糖(4.37%)和非脂乳固体(10.13%);氨基酸总量(TAA)为3.91 g/100 g,其中人体必需氨基酸(EAA)占TAA的44.67%,非必需氨基酸(NEAA)占TAA的55.33%;脂肪酸中含量最高的是十五碳烯酸。
In order to further study and make full use of milk products in Qilian yak,milk samples of 10 Qilian yaks were collected in mid-May 2023,and milk quality,amino acid content and fatty acid composition were detected by multi-function rapid dairy composition analyzer,automatic amino acid analyzer and gas chromatograph.The results showed that the main nutrients of Qilian yak milk included casein(3.83%),milk protein(4.79%),milk fat(7.80%),lactose(4.37%)and non-fat milk solids(10.13%).The total amino acid(TAA)was 3.91 g/100 g,of which the essential amino acid(EAA)accounted for 44.67%of TAA and the non-essential amino acid(NEAA)accounted for 55.33%.Pentadecenoic acid was the most abundant among fatty acids.
