摘要
花青素是一类具有水溶性的天然类黄酮植物色素,可被机体快速吸收,具有超强的抗氧化能力以及抑制炎症反应和提高免疫力等作用,是有效清除机体多余自由基的天然抗氧化剂之一。文章综述花青素的提取和纯化工艺,讨论花青素的最佳工艺流程条件及其开发利用功能,总结花青素在动物生产中的应用进展,旨在为花青素在动物生产中进一步高效利用提供参考。
Anthocyanin is a kind of water-soluble natural flavonoid plant pigment,which can be quickly absorbed by body.It has super antioxidant capacity,and can inhibit inflammatory reaction and improve immunity,which is one of the natural antioxidants that can effectively remove excess free radicals from body.The paper reviews the extraction and purification process of anthocyanin,discusses the best process conditions and the development and utilization functions of anthocyanin,summarizes the application progress of anthocyanin in animal production,to provide reference for further efficient utilization of anthocyanins in animal production.
